Our team selects the best grains from American, French, and Central European oaks: Jupilles, Tronçais, Vosgues, Missouri, Ohio… The subsequent drying will refine the wood. Natural and unhurried. For over two years, the sun and water will cleanse the wood of its most astringent tannins to transform its phenolic profile. The barrel enhances the wine organoleptically and adds value. We are aware that each wine demands a specific barrel, and we put all our "savoir faire" at your disposal. The toasting influences the final composition of the wood. The cooper manages the timing and intensity of the flame to create a wide palette of nuances: from the subtlety that wine needs to the robustness demanded by spirits. From the degradation of the compounds in the oak will emerge, as if by magic, vanilla, roasted notes, fruity or spicy hints… Knowledge of the timing and methodology helps us choose the desired aromatic profile.
