Three friends passionate about gastronomy and nature lovers, Thomas, Thibault, and Andréa, created JOKO. Their ambition is to promote French wild game meats and AOP Bigorre black pork using short supply chains. They offer high-quality natural products through authentic and innovative recipes, while fighting against food waste related to hunting. Their goal is to make exceptional products from the central Pyrenees accessible and to democratize them, all while providing an unforgettable tasting experience. Our artisan charcutier and cook, Pierre, has 28 years of experience and has won several awards in the field of charcuterie. He uses raw materials sourced from the region to create quality products. We place great importance on the agricultural and culinary traditions of the region, which is why we have chosen to work exclusively with top-quality regional products and to collaborate closely with various local stakeholders.
