Our company GAEC BIPER XOKOA is located in Halsou in the South-West of France. For nearly 10 years, we have specialized in the production of AOP Espelette pepper, a typical spice from the Basque Country that has a protected designation of origin (AOP). We practice organic farming and have held the AB label since 2018. We transform our entire production into powder and offer it in various forms: dried salt and fleur de sel with Espelette pepper, olive oil infused with Espelette pepper, as well as Espelette pepper cream and jelly. Our peppers are harvested between August and December, then cleaned, dried, sorted, and calibrated, all done entirely by hand. Grown in open fields, they undergo no phytosanitary treatments in accordance with a strict specification. We do not add any colorants, additives, or preservatives to our products; indeed, our powder consists solely of Espelette pepper. We wish to share with you the best of this Basque tradition to bring, in addition to color, a fruity and aromatic note to your dishes. In 2022, we received the most prestigious award by winning the gold medal at the CGA 2022.
